  1. Prepare 1 tbsp of oil.
  2. Prepare 1 tbsp of cornflour / cornstarch.
  3. You need 750 grams of diced stewing beef.
  4. Prepare 400 ml of beef stock.
  5. You need 400 grams of can of chopped tomatoes.
  6. Prepare 2 of red bell peppers, diced.
  7. You need 2 of yellow peppers, diced.
  8. You need 1 of onion, chopped.
  9. You need 200 grams of baby button mushrooms, quartered.
  10. Prepare 200 grams of green beans cut into 2" pieces.
  11. It's 2 tbsp of Jerk seasoning (or to taste).
  12. It's 1 tbsp of garlic puree.
  13. It's to taste of salt & ground black pepper.

  1. Preheat the oven to gas 3 / 160C / 325F.
  2. Heat the oil in a frying pan and lightly brown the diced beef.
  3. Drain the beef then transfer to a large casserole dish.
  4. Stir in the rest of the ingredients then put the lid on the dish and put in the oven for 2.5 - 3 hours.
  5. Stir again then season to taste. You may like to add more Jerk seasoning or some black pepper.
  6. Nice served with some coconut rice - see my Jerk Chicken recipe for ingredients and instructions or with some healthy cauliflower rice as pictured.
