- You need 500 g of pork diced into bitesized pieces.
- Prepare 2 tbsp of gluten-free / plain flour.
- It's 2 tbsp of oil plus extra if required.
- You need 1 of onion, chopped.
- It's 2 of red apples, cored and thickly diced.
- Prepare 300 ml of hot chicken stock.
- Prepare 2 tbsp of wholegrain mustard.
- You need 2 of bay leaves.
- It's 1 tbsp of dried chopped parsley.
- Prepare 1 tsp of brown sugar.
- It's To taste of salt & pepper.

- Season the flour with a wee shake of salt and pepper then toss the pork in the flour.
- Heat 2 tbsp oil in a large pan and brown the pork in batches, removing with a slotted spoon when browned.
- Fry the onion until softened adding more oil if required.
- Once softened, add the apple pieces and fry until golden.
- Add the pork back to the pan.
- Mix the stock, mustard, bay leaves, parsley and sugar together then add to the pan.
- Let simmer for 20 minutes until the pork has cooked through and the sauce has thickened. Remove the bay leaves and discard.
- Serve with boiled potatoes and seasonal veg or with white rice.
