  1. You need 500 g of pork diced into bitesized pieces.
  2. Prepare 2 tbsp of gluten-free / plain flour.
  3. It's 2 tbsp of oil plus extra if required.
  4. You need 1 of onion, chopped.
  5. It's 2 of red apples, cored and thickly diced.
  6. Prepare 300 ml of hot chicken stock.
  7. Prepare 2 tbsp of wholegrain mustard.
  8. You need 2 of bay leaves.
  9. It's 1 tbsp of dried chopped parsley.
  10. Prepare 1 tsp of brown sugar.
  11. It's To taste of salt & pepper.

  1. Season the flour with a wee shake of salt and pepper then toss the pork in the flour.
  2. Heat 2 tbsp oil in a large pan and brown the pork in batches, removing with a slotted spoon when browned.
  3. Fry the onion until softened adding more oil if required.
  4. Once softened, add the apple pieces and fry until golden.
  5. Add the pork back to the pan.
  6. Mix the stock, mustard, bay leaves, parsley and sugar together then add to the pan.
  7. Let simmer for 20 minutes until the pork has cooked through and the sauce has thickened. Remove the bay leaves and discard.
  8. Serve with boiled potatoes and seasonal veg or with white rice.
